- 1 Cup granulated sugar
- 1 Cup water
- 1 ripe peach
- ½ pint fresh raspberries
- 1 bunch fresh lemon thyme, (rinsed with woody ends removed)
- 1 Liter cold club soda
Simmer the cup of water with the cup of sugar until sugar is completely dissolved, remove from heat and let cool.
Slice the peach into 1/8th inch slices. Add them to the syrup and stir. Put in an airtight container and let infuse anywhere from 4 hours to 3 days.
Pour syrup through a strainer into a medium bowl, discard peach slices.
Add half the thyme and raspberries to the bowl – the other half will be used as garnish.
Use a potato masher or pestle to gently mash the raspberries so they release their juice.
Once again, strain but this time into a pitcher. Discard the leftover raspberries and thyme. Add club soda and ice and stir.
